Summer Ice Cream Mini-Series Part Three: Coffee Ice Cream with Brownies and Caramel Sauce

Just in time for the end of summer- Summer Ice Cream Mini-Series Part Three: Coffee Ice Cream with Brownies and Caramel Sauce! If you missed Part One (where I share all about my love of ice cream) and Part Two (where we take the whole operation to our friends’ garden) make sure to check them out Here and Here. And now here we are, the last one in my summer ice cream mimi-series. And guys, let me tell you, third time was the charm! I have been excited about this one from the beginning. While I have loved trying the other two more experimental ones, this to me is more of a classic. And I love a great classic. My trusty old Lickety Split did not disappoint, but instead gave me the best batch yet! Here are all the details!

Ice Cream (in each container)

  • One cup heavy cream
  • one cup cream
  • 1/4cup sugar
  • powdered coffee (about 3/4 Tbs: I used an individual packet, so you may want to experiment with your amount)
  • pinch of salt
  • brownies, cut into chunks and frozen (I made these the day prior)

Caramel Sauce

  • 1 cup sugar
  • 6 Tbs salted butter, room temperature and cut into chunks
  • 1/2 cup cream

For the Ice Cream: gather all your ingredients…

Although, leave the brownie chunks in the freezer until it’s time to add them. They are here just for drooling purposes 😉

Next add the cream, coffee, sugar and salt.

Get the Ice Cream maker ready to go and give everything a good stir. It is ok if the coffee powder isn’t perfectly mixed, this will even out as it spins. Pop the lids on and start adding the ice and salt. Or have your “assistant” add the ice. Have I told you how much I hate touching ice cubes?! Maybe just one of those quirky things about me but it is like nails on a chalkboard! Anyway… I’m thankful for my handsome hubs and his help….

While the ice cream is spinning, make the caramel sauce.

Start by heating the sugar until it is smooth, caramel in color and has a nutty aroma. This is easy to burn so don’t leave it, and just keep stirring! It will first get clumpy as pictured on the left. Just keep whisking, it will all melt together. This takes about 10 minutes or so.  Then, remove from the heat and add the butter. It will bubble and steam… just keep whisking! (are we sensing a theme?!) Mix until smooth.

Finally, add the cream, and yes… just keep whisking. Eventually it will become smooth. Now it is ready! None of this is a tidy process, by the way, at least when I make it. Just embrace it, if you can!

Time to check the ice cream. The plan was to add the brownie chunks partway through the freezing process, but we were a little late and it was completely frozen and ready, without the brownies!

IMG_8403.jpgPlan “B” for brownie utilization: Ice cram parfait. Layer brownie chunks on the bottom of the dish, add ice cream, add more brownies. Serve with caramel on the side.
