Summer Ice Cream Mini-Series Part Two: Wild Blackberry Lemon Ice Cream

Here we are- Part two! I had something a little different in mind for this round, but when I discovered the plethora of wild berries in our yard, I changed course. Because seize the day, ya know?! I say “wild” even though they are in my back yard so it seems so… tame. However, these are kind of beastly. Like I would need a ladder to get some of them and they have completely taken over our lilac! We really need to take the thing out, but I think we will wait until the fruit is done.

In Part One I went into my love of ice cream and my mom’s old ice cream maker. If you missed it, definitely check it out here! This time, I was taking the whole project to our friends’ beautiful back yard and garden to make for our dessert following a meal with them. Because of that, I kept the recipe a bit more simple.

Here is the recipe:

Pour into each container:

  • One cup heavy cream
  • One cup light cream (this time I tried half&half)
  • half of the berry puree
  • 1/4 cup of sugar
  • pinch of salt

Then, add the juice of one lemon. Blend again. Gather the rest of your ingredients.

Pour creams, berry puree, sugar, and pinch of salt into the containers. Mix up! Next add salt and ice according to your ice cream makers instructions.

Here is the thing. It was good, but amazing. I did not go bold enough. I needed way more berries and more lemon. And possibly more sugar, though I don’t like things too sweet. Next time I would double the berries and do juice from one and a half lemons. This attempt just did not have enough… oomph. But good thing I tried this because man, it is going to be soooo good next time with those adjustments!

The overal experience of it was quite fun, though!

Stay tuned for the third and final part! This time I am going to make something chocolatey and maybe some gooey caramel?! I will take suggestions… what exactly should I make?!
